Crispy Smashed Potatoes with Tarragon & Roasted Broccolini with Garlic and Lemon

Every great dinner party main needs sides that feel intentional — but not complicated.

For my Green, But Make It Chic menu, I paired lemon shallot chicken with two simple, texture-driven vegetables: crispy smashed potatoes with tarragon and roasted broccolini with garlic and lemon.

They’re straightforward. They can be prepped ahead. And together, they create contrast — crisp against tender, bright against rich.

When I’m hosting, I want sides that work hard without asking much from me.

Hosting Tip

Roast the potatoes first. Add the broccolini during the last 12–15 minutes so everything finishes around the same time.

If needed, the potatoes hold heat well — but always add lemon zest and herbs at the very end to keep them vibrant.

Crispy Smashed Potatoes with Tarragon & Lemon Zest

Golden, crispy edges. Creamy centers. Brightened at the end with fresh parsley and lemon zest.
Cook Time 1 hour
Course Side Dish

Ingredients
  

  • 1.5 lbs baby yellow or potatoes
  • Olive oil
  • Salt
  • 2 tsp dried tarragon
  • Parsley & lemon zest for garnish

Instructions
 

  • Boil potatoes until fork tender.
  • Preheat oven to 425°F.
  • Drain and place on sheet pan and gently smash.
  • Drizzle with olive oil, salt, and tarragon.
  • Roast until crispy (25–30 minutes).
  • Finish with parsley and lemon zest.

Roasted Broccolini with Garlic and Lemon

Simple. Bright. Slightly nutty. This is the kind of vegetable that balances the plate without stealing attention.
Cook Time 20 minutes

Ingredients
  

  • 2 bunches broccolini trimmed
  • Olive oil
  • 6-8 garlic cloves peeled
  • Kosher salt
  • Freshly cracked black pepper
  • ¼ cup sliced almonds toasted

Instructions
 

  • Preheat oven to 425°F (can roast alongside potatoes).
  • Toss broccolini with olive oil, salt, and pepper.
  • Spread in a single layer on a sheet pan and layer in whole peeled garlic cloves.
  • Roast until tender with slight char, about 12–15 minutes.
  • Finish with lemon zest.

Cucumber Salad with Mint, Basil and Trader Joe’s EBTB Seasoning

Guys, I am so into mint and basil chopped up on and in everything (see: herbed turkey meatballs). One of my 2019 Bucket List items was finishing dishes with fresh herbs or lemon/lime, and I’ve been all over it all year, but especially so now that the weather has finally broken.

This time of year begs for fresh flavors, crisp veggies, and overall light and quick meals. Really, who wants to turn on the stove anyway?! And less time in the kitchen means more time outside, or at the beach, lake or pool. Sign me up!

Three Bean Dip Recipe

I can’t decide if this is a three bean dip or a three bean salsa – what do you guys think? Honestly, salsa to me needs tomatoes and there aren’t any tomatoes in this recipe – so we’re going with a dip! And this dip is so quick, so easy and is so versatile!

With Memorial Day Weekend quickly approaching (seriously, where has the time gone this year?!), I’ve been thinking more about quick and easy dishes for all the BBQs were planning to have this summer. We’ve spent time getting the yard ready for hosting and really can’t wait to have friends and family over all season long.

There are so many reasons I love warmer weather, but for sure I love the change of food. The things that are in season and the foods we start to crave as the temperatures rise changes so much, doesn’t it? There are two things that feel like the true start of the warmer months to me: a cheeseburger and a cold pasta salad. Today, we’re talking about a quick and easy pesto pasta salad with just a few ingredients and almost no effort.

If you entertain a lot during the summer months, or even go to friends’ and family a lot in the summer months, a solid pasta salad is perfect to have in your back pocket. With the right ingredients a pasta salad can be so refreshing and the perfect side dish for grilling.

Are you thinking, “Hailey, do I really need a recipe to roast potatoes?” Uh, yes. Yes, you do. This roasted potato side dish will fill your house with the most amazing scent. Think, melted butter and garlic and herbs and just straight up deliciousness.

The secret? Melted butter, red onions, a lot of garlic, and parmesan. I could make this every single night and be perfectly content with my life.

An Easy Kale Salad for Christmas Eve

Getting the menu right for a holiday is all about balance. I try not to, for example, have too many carb-heavy dishes because you don’t want your guests to feel bloated. Plus, I’m really all about the sides. Plus, the sides can be so colorful! I love the sweetness and the crunchieness of this salad paired with the creamy bolognese pasta I’m serving up on Christmas Eve.

Can I let you guys in on a little secret? I don’t like kale. Well, I didn’t. And I was like, “you have to massage your kale? Too much work.” This coming from the girl who goes to 4 grocery stores every weekend just to shop for the week. I mean, really? So anyway, I made this salad, and I massaged the kale, because nobody has time for bitter kale, and I actually apparently really like it!

4 Ingredient Cranberry Sauce Recipe

When it comes to Thanksgiving, there are few things better than: 1. a recipe you can make ahead of time and 2. a recipe that comes together in 15 minutes.

Enter: cranberry sauce. Though I hate to admit it, I was most definitely a canned cranberry sauce kind of gal – you know, the one that still maintains the shape of the can when you dump it on a plate. But a few years ago, I finally made my own cranberry sauce after learning just how easy it is. It’s actually one of the few recipes I can just hold in my head and repeat year after year.

Perks of fresh cranberry sauce: it just tastes SO fresh. You don’t really need anything special for this recipe, though a citrus zester is handy for the orange peel garnish. It’s a $10 tool and certainly one I reach for at least once a month.

You’ll also want a pot with pretty high sides – I use my stock pot to make this cranberry sauce – because it WILL foam up. And if you’re pot is too small…well…you know.

Also. Even if you don’t love cranberry sauce, it still looks festive on your table! Breaks up all the brown, ya know?

 

 

4 Ingredient Cranberry Sauce

Yield: 2 cups | Prep Time: 2 minutes | Cook Time: 10 minutes + cooling time

 

Ingredients

1 lb bag cranberries

1 cup sugar

1/2 cup water

Juice of 1 orange

Orange zest, for garnish

 

Directions

Combine all ingredients except orange zest in a pot and bring to a boil over medium heat. Watch the pot the whole time and continuously stir to help break up the cranberries. When the cranberries start to foam, lower the heat very slightly and watch that your pot does not overflow. Once the foam subsides and cranberries are a mix of jelly-like liquid and crushed cranberries, remove from the heat and allow to cool. Transfer to a serving bowl, garnish with orange zest!
